La soupe au pistou - au pif (ie, the guesstimate approach)
olive oil
onion
courgette
green beans
2 or 3 potatoes
haricots coco (see the photo)
tomato, skin removed
parsley
for the pistou: 3 garlic cloves, basil, 3-5 tbsps of olive oil
- dice the onion and fry gently in the olive oil until transparent
- add the diced vegetables and tomato
- cover with water, add salt and pepper
- simmer for roughly 45 minutes
- meanwhile, prepare the pistou by blending ingredients in a mixer
- add to the soup, sprinkle over the parsley and serve
